I thought this was straightforward history, the UK then shafted the hashemites and gave them Jordan and Iraq and then let saud take over the Hejaz.

First thing that caused disintegration of the Ottoman Empire was nationalist Young Turks this sparked nationalist waves in other ethnic groups like some Arab groups. Arabs did not betray the Empire since many Arabs were still fighting on the Ottoman side. Arabs even participated in the Gallipoli Campaign which was decisive for the formation of a modern Turkish State.
When we say Arabs, we're talking about the retarded Hashemites and Saudi traitors. Emirates in the Arabian peninsula like Jabal Shammar were strong Ottoman allies.
