Grains are always better eaten fermented. It helps further breakdown antinutrients like phytic acid and makes it more digestible and easier to get at least some real nutrition from, outside of it just being a sugar/carb source for cheap energy. But honestly, most plant foods are simply just pleasure/backup foods. People should always prioritize meat, seafood, poultry, eggs and perhaps also dairy, preferably in its raw form.
