Alexander defeats the Persians you call him masterful, destroyer of Persia etc. But Khalid does the same with relatively less equipment, less logistics support and less manpower and you call him "incompetent".
Julius Caesar defeats bunch of untrained "tribesmen" in Gallic wars and you praise him hard even though the number of combatants that he faced were 75-100k according to historians. But he decimated the population killing more than a million and enslaving hundreds of thousands.
What you fail to mention is their superior equipment and how hard well trained his soldiers were, they had the greatest logistics support ever too. Compare that to a small Arab Bedouin never lift his finger at his Roman and Persian masters yet against all odds decimates the two Empire AT ONE GO.

2- Hannibal of Carthage- he marched on Rome itself, always outnumbered and even the great Roman legions could stop until he conquered north of Italy and was defeated near Rome, he was about to end the whole republic.
3- Alexander- probably the greatest general, he was young but very capable, he destroyed the Persian empire into pieces. The mighty Persian empire with its huge army had nothing on the Macedonian army.

You're over simplifying the war with Pompey. Both armies had almost similar numbers if you count their auxillary forces but Caesar's army had an exceptional training and experience on an individual level and very astute situational awareness compared to Pompey's legions. Pompey left most of his experienced veteran soldiers in Espana, the army that he led against Caesar was mostly composed of new inexperienced recruits. Pompey had one plan: STARVE Caesar and his army.
