Will I be able to pay for accommodation and goods with my New Zealand currency? Should I convert it to American dollars just to be safe? Will passport control reject me for having a New Zealand passport?

you gotta convert to american dollars. But don't convert whenever. Check how expensive new zealand dollars are, you can get more bang for your buck when new zealand dollars are expensive and american dollars are cheaper.
