Plants don't have a central nervous system so they don't have cognition and emotions.

Animals that aren't human can do whatever they like because they don't know better. Some of them can't digest vegetable matter at all. But humans understand the cruelty of eating animals and know they have alternatives, yet they still do it anyway. That is evil!
