The difference between atheists and theists is that atheists claim that "we do not know", the proof of the existence of God goes beyond our ability for now. No one is a true atheist, that would mean that they are certain that God does not exist. We can delve even further and break down the definition of "god". There are many definitions. I think that the main qualms with theists and atheists is the epistemology of knowledge.
