What's your favourite potato based dish

As all you know mine is jacket potatoes. Cheap, filling and absolutely fucking tasty when there's cheese& Beans. I've been wondering what other potato dishes there are (that taste really good) other than the aforementioned food and chips (or whatever fucking variation of it you eat).

I mean everyone eats potatoes except maybe the Irish. So what's your absolute favourite?
