Anything from Sawano Hiroyuki is an absolute banger.
Also, the Fate Universe's OSTs are so fitting with the theme of the series.
The one thing that puts the Japanese above others in music, and many other aspects, is that they actually think and ask themselves about what works the best, trying again and again until it sounds/feels correct.
Fun fact: traditional Somali and Japanese music follow the same 4 note/chord rhythm, as opposed to the 3 note/rhythm that most of the world uses/follows, especially the West.
